Improve Your Nutrition While Sheltering in Place

Are the Covid 19 restrictions making it hard for you to keep up with your usual health routines? If you’re like me, they are!

So I’d like to make a suggestion, let’s get back to basics. Eat your vegetables folks!

I have 3 tips to get you on your way to eating more vegetables.

Thrive Tip #1 – Buy Seasonal Vegetables

When you make your quarantine grocery store run go to the produce section. *everyone else is buying chips, little debbies cakes* I can guarantee they won’t be out! I recently picked up asparagus for $1.29 and a 3 pack of baby carrots for $1.99. Buy what’s on sale! It’s on sale because it’s in season meaning you’re going to get the best flavor.

Thrive Tip #2 – Eat Vegetables at EVERY Meal

I know we are used to the traditional dinner that includes a starch, protein, and a vegetable but what about lunch and breakfast? If you’re eating a sandwich for lunch don’t let the pickles be your only vegetable. Jazz that thing up by adding fresh vegetables like spinach, radishes, banana peppers, cucumbers, the list goes on. Now breakfast can seem more challenging if you’re used to eating a bowl of cereal. So increase your veggie intake at breakfast by having a smoothie. Be careful here though! You want more vegetables than fruit in the smoothie! Now If cold in the morning or drinking your meal doesn’t appeal to you, try adding veggies to eggs or hashbrowns. Or have a breakfast wrap with protein and veggies!

Thrive Tip #3 – Prep Your Vegetables or Buy Ready to Eat Vegetables

I despise throwing away food but let’s face it if you don’t eat fresh vegetables quickly they go bad. So prep your fresh veggies when you get home. If you have to clean romaine and a chop radish, are you going to add that to a sandwich? No, but if you have it precut or a bag salad mix you can quickly grab some to add to a sandwich. Note: Frozen or canned vegetables are perfectly fine.

Remember eating vegetables is a simple way to improve our health, boost immunity, and offer a huge nutritional impact. Plus fiber rich vegetables will fill you up quicker which can help you maintain a healthy weight while we are sheltering in place.
