Vegan Beefless Stir FryOne way to shorten your cooking time is to prepare a large batch of rice or pasta. The rice I used for tonight’s vegan eats is leftover from Sunday dinner. All I had to do today was stir fry my premixed frozen vegetables and add my protein source. Turned out to be a quick and easy meatless Monday meal!Szechuan Stir fry
